Brillat-Savarin, a Frenchman, was born in 1755 and was the first to describe the appreciation of food in any extensive and systematic way. Andre Simon, also French, was born in 1877. If later you absorb Savarin as the Father of Gastronomy it is hoped that you accept the somewhat poetic (or genealogical) licence of awarding the accolade Uncle of Gastronomy to Andre Simon.
